Is speed or velocity more helpful to a pilot?

Velocity, as it is is a vector quantity, so it has both direction and magnitude.
Speed is a scalar quantity, so it only has magnitude, no direction.

From experience it is far more important to know where you are going (direction) than how fast you are going (magnitude), though both are ...
